Recipe of the Month – Mince and Beans Mexican Style!
Looking for a quick dinner that will have the kids scraping their bowl and asking for seconds?! The children at Tillys Greta sure think this meal is one of the favourites! Try it out with our recipe below
250g beef mince
1 onion, chopped
1 small garlic clove
1 x 410g tin chopped tomatoes
1 small green capsicum, diced
1/4 tsp chilli powder (optional)
1/4 cup tomato paste
1 beef stock cube
1 410g tin red kidney beans, drained
1 tbsp cornflour
Packet of corn chips
1 1/2 cups grated tasty cheese
1. Combine in a large saucepan mince, onion, garlic, tomato, capsicum, chilli powder, tomato paste and stock cube.
2. Bring to the boil, cover, reduce heat and simmer for 20-30 minutes.
3. Add kidney beans.
4. Blend cornflour with enough cold water to make a smooth paste. Stir into mince mixture to thicken. Allow to boil for 1 minute.
5. Place corn chips on plate, top with mince mixture and grated cheese.
Top with greek yogurt, sour cream or
guacamole for taste!
